Chef Tim McDiarmid was raised on a farm in rural Canada, growing her own food. For Tim, “farm to table” isn’t a fad that might come and go out of style; it’s her history. After a decade working in some of the most visionary whole foods restaurants in New York City, Tim chose to settle down in sunny, laid back San Antonio, then only on the cusp of its culinary revolution. A single mother, she wanted a flexible profession that would allow her to be with her son as well as focus on the wholesome, playful diet she’d always enjoyed. Tim the Girl Catering was born in 2011. Since then, Tim has won numerous awards and accolades, and opened a second business, The Good Kind Café. Tim McDiarmid is a James Beard Fellow. She and other fellow food lovers, celebrate the chefs and leaders making our food system more delicious, diverse, and sustainable for everyone.

Ashley Linney, Director of Operations

Ashley has worked in the hospitality industry since she was 15, most recently as an event planner at Page Barteau Catering, and spent ten years overseeing high-end private events in Austin. From the initial conversation with a client all the way to the final, perfect event, Ashley handles all of the moving parts and ensures a seamless outcome. She handles event logistics and develops meticulous, confident execution for all events, from intimate catered dinners to large-scale festivals.

Lauren Lear, Director of Sales and Events

Lauren comes to us from two years as catering director and events manager for the Gwendolyn Group (Restaurant Gwendolyn, Il Forno, Kimura, and more), but has been in the food industry for 15 years. Lauren’s goal is to make each event as unique as the hosts, taking the time to get to know the client and their vision so that it can be brought to life. She loves to enjoy everything San Antonio has to offer, and is always scouting the freshest ideas and trends for our clients.

Lindsay Ozolins, Director of Finance and Personnel

A San Antonio native, Lindsay has spent much of her career blending her talent for finance with her passion for food and events. Always willing to find a solution, Lindsay wears many hats behind the scenes, but focuses most of her energy on keeping the accounts and office running smoothly. In her spare time, she enjoys working out and cooking at home with her new husband.

Javi Ruiz, Director of Culinary Operations

One of the first graduates of the Culinary Institute of America-San Antonio, Javi returned to San Antonio after serving as Executive Chef of the Officers Club at Offutt Air Force Base in Nebraska. Before joining Tim the Girl, Javi served as executive chef at Ocho, the restaurant and bar at the Hotel Havana.

Marcus Arredondo, Assistant Kitchen Manager

Marcus has been in the food industry for 14 years, including nine years in the Air Force Reserves and recently, as KM of Frank San Antonio. He appreciates the unique challenges of each kitchen and the chance to keep learning. He was drawn to Tim the Girl and The Good Kind because of the focus on compelling presentation without sacrificing flavor. “I appreciate the passion Tim and her staff have for beautiful, delicious food and wanted to be a part of it.” As AKM, Marcus focuses on developing organizational processes and streamlining our production flow, overseeing all of the assets of each location.
